The Vermont Appaloosa bean (Phaseolus vulgaris) is an heirloom bush variety known for its unique ivory beans with mottled purple patterns. The compact plants grow 18-24 inches tall, producing flat, green pods about 5 inches long. Young pods can be eaten as snap beans, while dried beans are ideal for soups, stews, and chili.
