The Absinthe tomato is a striking green-when-ripe heirloom variety known for its exceptional flavor and high productivity. The fruits are large, beefsteak-type, and turn a vibrant green with amber undertones when fully ripe. They have a rich, sweet flavor with a hint of citrus, making them ideal for fresh eating, slicing, and gourmet dishes. This indeterminate variety grows vigorously and requires staking due to its heavy fruit production. It matures in approximately 80–85 days from transplant.
